It’s called ssamjang—technically not a dip but a jang (or paste) that Koreans dollop in ssam (a wrap), specifically rice and grilled meat wrapped in crisp greens. This slightly chunky version is sweetened with agave syrup and tiny bites of apple.
Ingredients
- 1/3 c.doenjang (fermented Korean soybean paste)
- 1 tbsp.gochujang (fermented Korean chile paste)
- 1 tbsp.agave syrup
- 1 tbsp.plus 1 teaspoon toasted sesame oil
- 2 tsp.toasted sesame seeds
- 1small apple (Honey Crisp, Gala, or Fuji), peeled, cored, and finely chopped (about 1 cup)
- 2shishito peppers, thinly sliced into rounds
- 1clove garlic, minced
- 1scallion, thinly sliced

- Sliced cucumbers
- Radishes
